I want to record from two camera and use an observer to automatically replay.  Is the best way to do this to start up two instances of Kinovea using unique recording folders or is there a way to do with one instance?

I think two instances is the only way to go. I use 6 cameras with 3 instances of 2 cameras recording and 3 instances of 2 camera playback.
